As the signature fine dining restaurant at Terranea, mar’sel features a seasonally rotating menu that uses locally-sourced ingredients. Located in Southern California, mar’sel benefits from having several year-round farmer’s markets to select the very best ingredients from. One of the hottest ingredients right now is winter squash.   • Winter squash makes its local farmer’s market debut in late October to early November.
  • There are all different varieties that we enjoy using at mar’sel during this time, a few of them are; butternut, acorn, delicata, pink banana, spaghetti squash.
  • Some helpful information when picking squash is to make sure it is very hard and sounds hallow when you tap it and that the stem (if intact) is dry.

Two current mar’sel menu items with winter squash are:

Butternut squash tortelloni with brown butter, fried sage, meyer lemon, & shaved pecorino

                   

Baby purple kale, delicata squash, dried cranberries, pepitas, ricotta salata, & champagne vinaigrette
